Really Wild Venison
A small family business run by experienced restaurateurs, based overlooking Loch Linnhe in remote Kingairloch. As the name suggests, they sell only the wild venison that roams the Kingairloch Estate, as part of that estate's sustainable management system. These are hung for 7–14 days in a purpose built larder, where they are butchered to order. Only the early season stags and hinds are primarily used, avoiding the very gamey tasting stag meat prior to and during the rutting season.
