Somewhat more than ‘just’ a bread school, Bread Matters are making it their mission not just to change how we make bread, but what we make it from. Director Andrew Whitley is also co-founder of the UK-wide Real Bread Campaign, and a central tenet of his business is working towards greater sustainability in how food, including wheat, is grown, made, sold and distributed. Working closely with Whitmuir the Organic Place, they have established the Breadshare Community Supported Bakery, with products including bread, cakes and biscuits on sale at Whitmuir farm shop. However, Bread Matter’s core income stream comes from putting on bread making lessons at Macbiehill Farmhouse in West Linton, including a new collaboration with the nearby Horseshoe Inn for a weekend of dough kneading, dinner and talks. Courses are led by Andrew and range from beginners to advanced, from how to bake for a living to making gluten-free bread.
