Bread Matters has always been more than ‘just’ a breadmaking school. The directors Andrew Whitley and Veronica Burke have made it their mission not only to change the way we make bread, but also to transform what we make it from. Their innovative project Scotland The Bread is now a Community Benefit Society, growing and milling heritage Scottish wheats as part of a healthy, fair and sustainable food system, whilst supporting communities to control their local grain, flour and bread supply.
Andrew Whitley is also co-founder of the UK’s Real Bread Campaign and the author of two celebrated Real Bread books: Bread Matters; why and how to bake your own and Do Sourdough; slow bread for busy lives.
Whilst Bread Matters no longer runs hands-on courses, it remains the place to find Andrew’s books and a carefully chosen range of equipment, from proving baskets and baking tins to hand-crafted German bread and knives and boards.
