Bob Phaff has seen the brewing industry from many angles, having worked in Milton Keynes’ Concrete Cow brewery and written a book about the breweries of Idaho, so starting his own brewery was the fulfilment of a long-held dream. In 2012 he got the keys to his four-barrel brewing equipment in Glenrothes, and quickly graduated from supplying local farm shops and restaurants to almost 100 outlets across Scotland. His range is made up of eight regular bottled beers, from straw-yellow Fife Gold to India Pale Ale to Oatmeal Stout, a dark, bitter Scotch ale. Each month he brews a one-off in smaller 330ml bottles, experimenting with higher alcohol content, added flavours and hops. Plans leap forward: Phaff joined forces with local restaurateur Tim Butler to open St Andrews’ first bar and restaurant with integrated brewery in November 2013, and he’s due to move into his own brewery in February 2014, with double the capacity.
