The Compasses Pub Stansfield is situated in the heart of the Suffolk countryside, between Newmarket, Bury St Edmunds and Sudbury, and was often captured in Gainsborough's paintings. The owners Ron and Jaqcue aim to create an affable atmosphere in the restaurant that fits seamlessly into the surroundings. Catch up with friends and unwind with a glass of wine or real ale in the bar at the end of a hectic day, and with cold weather, there is a roaring open fire going. Ron cooked as head chef two restaurants to a Michelin star in Holland. He may have expanded his sphere of culinary ideas but his cooking at the compasses looks closer to home for influence. So from the regularly changing menu there is fresh calamari, deep-fried with salt and pepper with a chilli dip, chicken liver pate with Cumberland sauce and sautéed garlic mushrooms for starters. Main courses include halibut fillet with capers and a brown white wine butter, and lamb shank slowly cooked for hours in the oven, served with a mixed herb red wine sauce to celebrate all things British.
