When your fans include Gordon Ramsay, Clarissa Dickson Wright and Heston Blumenthal, the chances are you’re doing something right. And Peebles-based Linda Dick is certainly doing that. A small family run farming business, Dick and her family’s free range chickens have become the toast of the Borders – regularly mentioned in recipes by the culinary world’s great and good. Recently the family expanded its enterprise and now produce free-range duck eggs and cold oak-smoked chicken fillets to cafés and butchers throughout Scotland. Linda Dick's wares can also be found at Café Fish and Earthy Foods in Edinburgh and John Saunderson Butchers to name a few. Determined to produce the best possible taste from field to plate, she feeds all her birds additive-free rations and houses them in large straw beds at night.
