Signature, the restaurant at the Ballantrae Albany Hotel, has its official launch planned for June 2011 when they’ll unveil their patio and beer garden in time for the famous Edinburgh summer weather. In the meantime, diners can enjoy the stylish interior where dinner is served seven days a week. The contemporary menu features dishes which make the most of Scottish produce: Cullen skink, haggis parcels, smoked salmon, Aberdeen Angus beef and venison; as well as those which take their inspiration from further afield such as sea bass baked with pine kernels and fennel, and butternut squash and almond risotto. With the capacity to seat up to 70 people outside, Signature could be set to be the destination de jour when the sun shines. [Not yet open at time of going to press.]
