Through the terrace and plush leather-boothed bar, the striking restaurant at the rear of this Princes Square establishment is where the real action happens. The huge open kitchen and grill serves as a backdrop while the side wall is sheer glass looking out to the street. The atmosphere is fun and vibrant. British standards and grill options form the basis of the menu with pastas, salads and a noticeable eastern influence offering further choice. Lightly charred asparagus spears, a perfect poached egg and creamy hollandaise is a classic done just right. Smooth, rich chicken liver parfait is also a delight with mini toast and fresh chunky apple chutney. The fillet steak is not quite the impeccable piece of meat the price tag suggests, especially since sides are ordered separately, but the béarnaise sauce is rich and creamy. Grilled sea bass is simple, served with lemon, with green beans in shallot butter accompanying it nicely. Indecisive sweet tooths can try the pudding plate – two-bite portions of four desserts, nutty chocolate brownie and a tart lemon posset being particular highlights.

The name betrays either supreme confidence or a dearth of imagination. But, while The Restaurant Bar and Grill may not sound as exciting as its predecessors – Zinc and étain have been merged into one – there is a sense of self-assurance running…
