The definition of a quirky, artisanal producer with just six cheeses available through farmers' markets and delis. In the five years since Standhill started production after Jim and Annie Shanks decided on a post-retirement cheese career, their Minto Mellow Cheddar has become established. Winter snow led to transport issues and a glut of milk, which was promptly transformed into a fresh crowdie, now a best-seller. Also popular is the fabulously named Fatlips Castle Blue – named after a local landmark, not one of the coos.
