As the name implies, Scotland's oldest, native breed is the focus here. Smaller and slower growing than modern beef cattle, Highland beef is known for flavour, texture and tenderness. Naturally reared on a grass-based diet and hung for at least three weeks before cutting, no antibiotics are used unless necessary, and no growth promoters. It is available in steaks, roasting joints and mince, vacuum-packed and sold through Stirling Farmers' Market (second Saturday of the month), by mail order and direct from the farm by prior arrangement. Orders can be placed a week prior to the farmers' market for collection.
