In the heart of Stockbridge, Bowers has earned itself a reputation as one of the best quality butchers in Edinburgh. It sets itself apart by buying, plucking and dressing game (explaining the stuffed head on the walls), so don’t be surprised if you find yourself leaving with a rabbit, hare or quail as well as sausages and bacon, or if the customer before you hands a brace of pheasant over to be dealt with. Most produce is sourced locally, including Linda Dick chicken, East Lothian game and Black Gold rapeseed oil. When it comes to a leg of goat or Highland beef, however, you know just where it's come from: Smith's own farm. A whole counter is given over to pies and savoury pastries, and a freezer to homemade stocks, gravy and tripe. They smoke their own bacon and make their own sausages, black pudding and haggis – if they can make it themselves they prefer to, and they'll happily pass on their cooking tips.
