Powered by water from the Big Burn, Golspie Mill has been back up and running making a range of artisan stoneground flours and meals since being fully restored in 2002. Manager and miller Michael Shaw grinds and packs whole grains and pulses to order: many are certified organic, and all are entirely free from additives. Among their specialities are peasemeal (pea flour) and the ancient Orcadian grain beremeal, both of which are low in gluten and suitable for special diets. Mill produce is available at good food shops across the country, or by mail order for areas without a convenient stockist.
