On the island of Burray, a short drive from the Orkney mainland via the Churchill Barriers, the Watersound restaurant in Sands Hotel is open to the public as well as hotel guests. Right on the harbourfront, the 1860 building originally operated as a herring station but has been converted and upgraded into a small hotel over the years. At lunch and dinner, Orkney produce is cooked with a classic French influence in dishes like lamb shank with puy lentils, sauteed savoy cabbage and garlic mash drizzled with a jus made from Orkney Portent, a local tipple. Orkney steaks, hand-dived scallops and the daily fish catch round out the up-market menu, and the views across to South Ronaldsay make for a memorable meal.
