Bathed in green light and with the largest rum selection in Scotland, Distill offers atmosphere and comfort with a hearty nod to local produce within their menu.
Despite offering over 120 different rum options – the largest selection in Scotland – Distill doesn't feel the need to shout about it too much. Undoubtedly a big draw for many, this bar is also more than just a good rum bar. With its distinctive green lighting, this Finnieston bar (and its past incarnations) has long been a popular place for locals, young aspiring DJs and those who enjoy the cool indoor and outdoor areas. The kitchen boasts a seasonal menu where Shetland mussels, smoked mackerel and beer-battered fish supper all represent a national pride in Scottish produce. Lamb shoulder comes succulent and handsome, working to great effect with the sweetness and freshness of apricots and cumin yogurt. Yet its their brunch and lunch menu that attracts the most devotees with an enviable choice of poached egg varieties served with classic muffin, hollandaise, et al. With schooners of Hop House, West Heferweisen or bottles of Beavertown and Siren Undercurrent Oatmeal IPA, beer lovers will be exclaiming: 'Distill, my beating heart!’
