Despite the fact that there are some familiar pizzas and kebabs on offer at Istanbul, don't expect this to be particularly fast fast food. Everything is made from scratch so orders can take 20 minutes to prepare, particularly at peak weekend times. Vast, sizzling, marinated lamb shish kebabs are cooked on an open grill while boxes of salad and home made chunky chilli sauce are assembled alongside. Each kebab comes with a freshly made pide bread – a sesame-topped naan-like accompaniment with almost nothing in common with its bendy cousin, the pita. As orders pile up on a Friday or Saturday night, so too do the dough circles, left to prove in the warmth of the busy rear section of the kitchen. At about £4 a go the tender grilled lamb, salad, sauce and bread offers a healthy meal at a great price. And the oval Turkish pizzas – such as the tomato and cheese Trabzon, which seems almost as vast as the Turkish coastal city it is named after – are soft and light on oil, with an extremely delicate mozzarella topping.
