After a recent refurb, the focus at the Wellington Café is even more firmly on the best coffee they can coax from a bean. Panini and bacon rolls have gone; the food now consists simply of excellent daily delivered brownies, sizeable scones and tray bakes from sister joint Project Coffee. This leaves time and space for two grinders: a regular filled with Square Mile, doyenne of the coffee world (Wellington swear they’re the only café outside England to stock this), and a guest grinder often featuring Has Bean’s Red Brick, of World Barista Championship fame. For non-coffee lovers they do a mean hot chocolate, as well as good Waterloo Gardens tea. If you want to know more about your daily caffeine fix, just ask the baristas and let their enthusiasm shine through.

I think this has to be one of the worst and smallest flat white's I have ever had and is certainly not on an NZ standard.

best flat white in town!!! not very friendly staff though, the guy at my local Starbucks always smiles and chats so I may actually go for that!

Wellington's has to sell some of the best coffee in the city centre. A million times better than the homogenised coffee on offer from a competitor on the opposite side of the street....

Having been in more often lately I take back the average service comment. Friendly enough and super slick just working their butts off sometimes.

Another "good coffee, average service" comment. It does seem to be a fact. (btw -"takewayers" should wait their turn like everyone else)
I don't really need the chatting and grinning coffee foreplay anyway. Slightly prone to underheating the milk by a couple of degrees -just to distance themselves from the boiled milk norm- but Wellington remains one of the very few places in Edinburgh you can be assured of a good coffee and for that they actually are doing us a favour.

Some of the best coffee in Edinburgh is on offer here. I've long lamented the inability of your average coffee house (even the majority of independents) to produce coffee at the right temperature and intensity. Here though, they've got the right equipment (Synesso), and the training evidently focuses on excellent, consistent results.
The only downside? Service is consistently perfunctory, and hints towards the "we're doing you a favour" type service. If you order a takeaway, you'll wait in line behind the already taken "sit-down" orders, even if they've ordered food/cakes and it all needs to be put together and served to them.
However, if you can avoid getting irritated by the staff, and don't mind a wait, the coffee is worth it.
