A twice-monthly cheese tasting taking in different styles of cheesemaking, processes, milks and regional differences.
In a class we taste about 12 cheeses and discuss the flavours, processes and stories behind the cheese. Tastings are informal but structured with an emphasis on personal reaction and communication within the group.
The night is led by Phoebe Weller, aka The Roving Fromagiere, who's been hosting Scotland's only cheese classes for over two years. With a long service at Mellis' under her belt, she now advises restaurants and wholesalers on all things cheese, has appeared on TV and radio talking cheese and helps organise the British Cheese Awards where she holds master classes.
